Jose Maximo, a third-generation farmer from "Los Pajuiles" in Cofradia, Honduras, grew up working on farms after leaving school at second grade. After completing military service, he returned home, married Guillermina, and had six children. When his grandfather passed, Jose was left without land, so he used his savings and sold livestock to purchase new land and machinery. He chose to grow Microlot Specialty coffee on fertile land, which produces a unique flavor profile influenced by the diverse flora and fauna on his farm. The coffee plants, particularly the Jaguar variety, mature over 10 years and are harvested from December to February. The farm, now 8 hectares, is part of sustainable reforestation projects and is home to protected animals like agoutis, squirrels, and parrots.
Jose's coffee, our Jaguar, has become one of our bestsellers. It is intense, full-bodied, and bursting with fruity, honeyed flavours, making it a truly special microlot coffee.
